US-05 instead of Danstar...check.
Swap 2 lbs wheat extract for for 2 lbs Marris Otter.
Swap 6.3 lbs dark malt extract for .5 lb Crystal 120 and .5 lb roast barley.
Oak spirals instead of oak cubes.
Will using the extra 1 pound of crushed grains really make up for leaving out 6.3 lbs of extract, or do I have something mixed up? Wouldn't leaving out all of that extract drastically affect the OG?
No.....Use Marris Otter for both the wheat and the dark LME......That would be a total of 8.3 lbs. Round up to 9. You don't have to use it all, but if you do, it will just be slightly bigger.

I was just on my way back to ask your opinion on going from 8.3 to 9.15 as that is the packaging size I can find. I like slightly bigger...

Do you like the hop bill from that kit? Chinook/US Goldings/US Goldings. Leaf vs pellet? Since I get to choose now.

The hops seem fine to me. I do enjoy using Fuggle to finish. The earthy aroma pairs well with the style. I prefer pellet. The leaf hops absorb a lot of the wort. The pellets do as well, but no where near as much as leaf.
Here is a great site for information on hops:

Thanks again for another good link. You could be on the Home Brew rescue squad!
NB had every ingredient so I've got it sitting in my cart waiting on me. It's about $25 more than the extract kit but I'm sure the difference will be worth it. My brew buddy wants to do a wheat beer next so this might get shoved back a few weeks.
On another note, I just found a home brew club in my town! We're a town of just 20,000 with nothing of comparable size within an hour of us, so the thought of one being here never crossed my mind. I was checking out the local events calendar when I stumbled across their meeting date. I still figured there wouldn't be much to it, but here is a passage from a meeting summary on their website:
We had a great turnout yesterday with lots of home-brew. There was a Stout on mixed nitrous gas, a English Mild, two Samichlaus clones, a Munich Helles, a Bragget, a Mystery Beer, a commercial Pale Ale and a Wheat beer from Colorado just to name a few.
Definitely seems to have some potential! They're having a "Learn to Brew" event in 2 weeks. Perfect timing for this newb. Totally stoked about it.

The AHA has designated Saturday as "Teach a friend to home brew day". My club is brewing an English Mild.
This is part of our brew system:

That is the recirculating mash tun. We also have a 50 gallon boil kettle and 60 plate chiller. This is where I've learned to brew really good beer. Hanging out with others that have more experience. Several in the club have brewed professionally. It is the oldest club in Atlanta.

If you join that club and brew some beers.....You must enter them in our clubs annual competition. It's on the BJCP calender for March 23rd. The 320th annual Peach State Brew Off.
