Using the home key will keep the application in the state that it was in when you press home. You could then load the app again and it will go back to where it was. Using the back key will exit the application. It is better to use the back key to exit so you don't use as much memory up running something in the background.

The home key or back key will both work. Some application ions actually have a quit or something exit option if you press the menu screen.

Note the home button is the equivalent of having an open windows on a computer and just minimizing it to go back to the desktop. Your application will still be running. The back button takes you back through previous menu/page screens and will back you out of the application. For most apps this is how you will exit them so the app will not be running in the background.
